The north bus tour of Malta has some interesting stops. I don't know how to choose between north or south if you only have time for one since they have different strengths. We visited San Anton Garden, the walled city of Mdina, and the Roman Villa in Mdina. I didn't think the Roman Villa was worthwhile for the cost so I'm not going to bother posting the few pics I took there. Mdina is the star of the north tour.
The San Anton garden is nice in February but probably really wonderful in warmer weather. Game of Thrones filmed their first season in Malta. Some scenes were apparently done in this garden but it didn't look like they used any of the publicly accessible areas.
The walled city of Mdina is a great place. It's also great for GoT sightseeing since the city gate was used for King's Landing and it looks the same. Mesquita Square was Littlefinger's brothel exterior with the recognizable balcony. It was also the location of Ned Stark's capture so rewatch that scene before visiting.
